I’ve watched numerous YouTube videos too over the years in the hopes of learning to fold a fitted sheet. I’m following Fr. Sam and his idea that they just aren’t meant to be folded.

Perhaps consult your Mom. Also, I recall something about using a flat surface and make it into a box-like / tablecloth .
Lay it on a flat surface, like the bed. Seam to seam. Then seam to seam. Then corner to corner.
I have the same problem trying to fold a fitted sheet and have it look perfect.
